Yield: 4 servings
1 pound macaroni, cooked according to package directions
4 cups warm whole milk (do not boil)
½ cup butter, divided
½ cup flour
6 cups shredded Emmi Le Gruyère Switzerland AOC
1 ½ cups fresh bread crumbs
Salt/ pepper/ hot sauce (optional)
Preheat oven to 375º. Create roux by melting 6 tablespoons of butter in a medium-large pan on stove over medium heat for about 3 minutes, continually whisking. Slowly add warm milk, and whisk until sauce has thickened. Stir in shredded cheese. When cheese has fully melted, add macaroni to pan; mix well and season to taste.
Place macaroni mixture in baking dish. Melt remaining butter and mix it with bread crumbs, sprinkle evenly over the top of dish. Bake for 35 minutes or until bubbly and browned on top. Let rest 10 minutes before serving.
