As summer approaches I find the need as always to shed the holiday weight that I packed on. This recipe is simple, healthy and low on the calories. An excellent healthy meal paired with fresh tomatoes drizzled in balsamic vinegar and steamed broccoli with a little garlic salt sprinkled on top.
1-1/2 pound shrimp
juice of two oranges
juice of one lime
5 cloves garlic
1/2 cup chicken broth
3/4 tablespoon salt (or more if you are a salt person)
fresh ground pepper to taste
In a skillet pour juices, broth, garlic, salt and pepper and bring to a boil. Turn heat down and let simmer for five minutes. Turn the heat up to medium add the schrimp and cook until white all the way through.
