Sometimes you splurge and when you do, go big. This is seriously one of the most delicious things I have ever made. It is perfect for all of your summer barbecues. Potato salad is so 1950. Tater Tot Casserole? So right now. 

Thaw out frozen round potatoes.

Tater Tot and Bacon Casserole Preheat oven to 350 degrees. Fry bacon until lightly crispy. Pat the grease off and chop.
Tater Tot and Bacon CasseroleChop onion. Saute chopped onion in bacon grease until softened and lightly browned. 
Tater Tot and Bacon CasseroleEmpty the can of cream of chicken into a bowl. Then fill the can halfway with heavy whipping cream. Dump into the bowl with cream of chicken soup and stir until completely mixed. Lightly spray 9 x 13 casserole dish. Put a small layer of chicken soup mixture in bottom of casserole dish.
Tater Tot and Bacon Casserole Layer 1/2 of the potato rounds. Layer 1/2 of remaining soup mix, onion, chopped bacon and half of the cheddar cheese.
Tater Tot and Bacon Casserole The first layer will look like this. Repeat all layers except cheese.

  1. one pound bag frozen round potatoes (round tater tots)
  2. six slices bacon
  3. one onion
  4. three cups cheddar cheese
  5. one can cream of chicken soup
  6. 1/2 cream of chicken can of heavy whipping cream
  7. olive oil spray

  2. Preheat oven to 350 degrees.
  3. Fry bacon until lightly crispy. Pat the grease off and chop.
  4. Chop onion.
  5. Saute chopped onion in bacon grease until softened and lightly browned.
  6. Empty the can of cream of chicken into a bowl. Then fill the can halfway with heavy whipping cream. Dump into the bowl with cream of chicken soup and stir until completely mixed.
  7. Lightly spray 9 x 13 casserole dish.
  8. Put a small layer of chicken soup mixture in bottom of casserole dish.
  9. Layer 1/2 of the potato rounds.
  10. Layer 1/2 of remaining soup mix, onion, bacon and half of the cheddar cheese.
  11. Repeat.
  12. Cook in 350 degree oven for one hour or until cheese is lightly browned.
