Strawberry Vanilla Tart Recipe

I love to bake, but I have a baking philosophy.  If it’s not easy I don’t do it!  I am not a professional baker, I’m a working mom.  Who has time to scrape and prepare a vanilla bean?  Not me!  If I can’t prepare, bake and clean it up in one hour it’s not the right recipe.

With that said, here is my version of a Strawberry Vanilla tart.

Strawberry Vanilla Tart

 

Crust

Ingredients

1 1/4 cups of organic unbleached flour

1/3 cup organic raw sugar

1/2 cup (1 stick) organic unsalted butter

a dash of salt

You’ll also need

1 9 inch tart pan with removable bottom.

Food Processor

Directions

Slice butter into cubes straight from refrigerator, it will work better cold. Pour butter, flour, sugar, and salt to the food processor.  Pulse until it’s a crumbly texture.  Pour into tart pan, press and side until it’s firm.

Place in freezer for about 10 minutes.  Pre-Heat oven to 350. Remove and poke several holes with a fork around the bottom.  This will help to make sure the crust doesn’t bubble. Bake crust at 350 for 25 to 30 minutes.  Remove from oven and let it cool on a rack.  Keep it in this pan.

You always have the option to buy a pre-made crust and mold it into the pan as well.

Tart Filling

Ingredients

8 oz. Cream Cheese

1/4 cup organic raw sugar

1/4 teaspoon of vanilla ( or to taste )

You’ll also need

Mixer

Directions

Combine soft cream cheese (room temp will be soft enough), sugar and vanilla in mixer until soft and creamy.

Tart filling

Spoon into crust and smooth out filling so that it’s even and flat.

Arrange berries on top, remove tart from pan rim and enjoy!
