Simple Quinoa Salad

Quinoa has become my FAVORITE side dish, main dish, desert… I like to make a batch on Sunday have some for dinner and then have leftover for lunches during the week. This recipe is a very simple one so when I am pressed for time, this is the one I use.

Ingredients
1 cup quinoa
2 cups chicken broth
½ cup pine nuts roasted
2 bunches green onions
12 ounces cherry tomatoes
½ cup garbanzo beans
2 T fresh mint
¼ cup fresh squeezed lemon juice
? c red wine vinegar
? c olive oil
½ teaspoon salt
fresh ground pepper to taste
garnish with avocado and/or feta if desired

Cook quinoa per directions on box. Spray a pan lightly with oil and slightly roast the pine nuts. Chop the green onions including the green tender part. Rinse and dry tomatoes then chop in half. Chop mint. Squeeze lemons. Combine all ingredients.

This salad gets better the longer it sits.
