This simple marinade makes for delicious steak tacos. Make it the night before for best flavor. Grill or broil it and throw it in a shell with Ooph’s homemade salsa and guacamole then add a little cheese or sour cream. The kids will love it and so will you. Serve it with a side of Ooph’s Black Beans and you have the perfect family meal.
- steak of choice (I use rib eye cuts, but they can be expensive)
- 1 cup soy sauce
- 1 teaspoon salt
- juice from one lime
- fresh ground pepper
- Combine all ingredients in an air tight container and let marinade in the fridge at least two hours. Set out on counter about 20-30 minutes prior to cooking. Throw on the grill or broil to desired doneness. To cook them to the pink shown above, I broiled them on a rack placed so that the steaks were about six inches below the broiler in oven and broiled on high for seven minutes each side. On the grill about 5-7 minutes per side on medium heat.
