These have become a family favorite in our house. They are so good the kids actually ask me to make them. Who knew Brussels sprouts could be so good?
Ooph's Roasted Brussels Sprouts
Delicious roasted Brussels sprouts. So yummy even your kids will love them!

- 2 pounds Brussels sprouts
- 1 tablespoon olive oil
- 1 teaspoon salt
- ¼ teaspoon fresh ground pepper
- Trim the ends from the Brussels sprouts, remove any yellow leaves and cut in half lengthwise. Place in a bowl. Add olive oil, salt and pepper and stir until completely coated. Place on cookie sheet. Bake at 425 degrees on a rack positioned so sprouts are about six inches from top of the oven for 30 minutes. If using two cookie sheets, rotate at fifteen minutes. The Brussels sprouts are perfectly roasted when they start to brown.
