Since moving to California years ago, enjoying Mexican food has become quite an obsession. And salsa to me is like wine, I am quite snobby about it. I don’t eat it out of jars and I won’t go to the same Mexican restaurant twice if the salsa is crap. Truth be told I would rather make my own because I know what I like and how I like it. This salsa is delish. Serve it with Ooph’s Steak Tacos, Black Beans and Guacamole.

Delicious homemade fresh and chunky salsa. You will want to put this on everything. Tacos, scrambled eggs and of course chips. Serve with Ooph's Guacamole.

Ingredients
  1. 1 can stewed tomatoes (15 ounces)
  2. 1 can diced chiles (4 ounces)
  3. 1 medium red onion - quartered
  4. 2 bunches scallions, white and green tender parts only - cut into four pieces
  5. 4 cloves garlic
  6. 1/2 bunch cilantro
  7. 2 jalepenos - seeded and chopped into four pieces
  8. 4 medium to large tomatoes (I use heirloom whenever I can find them)
  9. 2 teaspoons cumin
  10. 1 teaspoon sugar
  11. 1-1/2 teaspoon salt
  12. juice of one lime
  13. fresh ground pepper to taste
Instructions
  1. Add all ingredients except fresh tomatoes into your food processor. Pulse a few times. Enough to chop the veggies but keep it chunky. You want salsa not soup. Put in a large bowl. Chop the tomatoes in fours and add to the food processor. Give it a pulse or two. Remember...keep it chunky. Combine all ingredients and serve with chips or on tacos. This makes a hug batch, so I always drop off a container of it to a friend the next day. Makes me darn popular.
