Banana Pecan Bread Recipe

One of the best things in my life growing up was walking into my mimi’s front door and being greeted by the smell of banana bread baking in the oven. Every time I bake it now I am instantly transported back to that childlike joy. 

Homemade Banana Nut Bread
 
This amazingingly delicious recipe of my grandmother’s makes two loaves. Just wait until you put it in the oven. Your house will smell like fall. 
Ingredients
  • 3 cups sugar
  • 1 cup corn oil
  • 4 eggs
  • 2-1/2 cups ripe mashed bananas
  • 3-1/2 cups flour
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons salt
  • 1 cup chopped pecans
Instructions
  1. In a large mixer bowl beat sugar, oil and eggs.
  2. Beat in bananas.
  3. In a separate bowl stir together flour, soda and salt.
  4. Stir flour mixture into banana mixture.
  5. Stir in nuts.
  6. Pour batter into TWO greased and floured 9×5 loaf pans.
  7. Bake at 350 degrees for 60-75 minutes.
  8. Begin checking with a cake tester at 60 minutes. When it comes out clean bread is done.
