You may have read my My Little Pony App Party post last week. When I was asked to throw this party I was super excited! I love throwing parties. Then it hit me, I have to start planning the menu. Normally no big deal, but this time it’s different. CRAP! All these lovely ladies coming to the party are also the same lovely ladies that are participating in all the healthy aspects of my life as well. I couldn’t just serve them pizza. I needed to come up with a healthy alternative.
I ordered wraps from Froots and then started to look through all Kathy Kaehlers amazing recipes on her Sunday Set Up™ website. I threw together some of Kathy’s Gorp to snack on and my new favorite dip Black Bean Salsa. I then made my favorite Quinoa Recipe which was inspired by a Dining Details recipe.
So many people have asked for my Quinoa recipe today I’m going to share the new and improved recipe here.
1 bunches of fresh parsley (chopped, with stems discarded, but not in the garbage disposal. That story is for another time.)
2 tablespoons of fresh mint, chopped
4 green onions (spring onions) chopped
grape tomatoes, sliced
1 tablespoon salt
1 /2 teaspoon black pepper
1 cup quinoa
2 cups of chicken broth
6 tablespoons lemon juice
6 tablespoons extra virgin olive oil
1 cup crumbled goat cheese. I normally have to buy 2 containers.
diced green olives or katamata olives can be mixed in with other ingredients.
Grilled Chicken or Grilled Shrimp to serve over top.
Make the Quinoa and drain well. Stir in cheese while Quinoa was still hot so that cheese melts.
Chill in refrigerator for 2 hours. Once the Quinoa combine all ingredients and toss well.
