For those of you out there reading this who actually know me I want to clear up a viscous rumor, contrary to popular belief, I do eat some green foods! I know there’s a big misconception that I ONLY eat fast food. I don’t, I eat iceberg lettuce, so there! 😉
Ok, maybe I’m not the healthiest eater. When Julie from Dining Details asked if I want to host a cooking demo at my house I was really excited, but a bit nervous that I’d have to actually eat green food. I ate it and I liked it! Julie didn’t just cook for the 7 of us, she actually taught us to eat healthier and proved that Green food didn’t have to taste bad.

I learned so much after just a few hours with Julie, that I have to admit that I was a bit overwhelmed. Changing the way my family eats is going to be a huge undertaking, but something I feel we need to do.
After a night of Julie cooking us 5 amazing dishes, I knew I had to try to cook one myself. If for no other reason then to prove to myself that I can actually cook a good dinner for my family. So Wednesday afternoon I started by cooking a Quinoa dish. It was so easy and so good!!!
2 bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)
2 tablespoons of fresh mint, chopped
4 green onions, white part only finely chopped
6 medium tomatoes, diced
1 tablespoon salt
1 /2 teaspoon black pepper
1 cup quinoa
6 tablespoons lemon juice
6 tablespoons extra virgin olive oil
1 c sheep’s milk feta cheese, cubed ( I used crumbled)
1/2 cup garbanzo means, rinsed and drained well
Make the Quinoa and drain well.
Combine all ingredients and toss well.
Serve immediatley or chill in refrigerator for 2 hours before serving (I chilled it)
I did it and successfully! My husband loved it and I enjoyed making so much that it will be a staple at our summer dinner parties.
There are so many things to cover from just that one night that I’m going to break this up into a couple of post. Wait until I tell you about Chickpeas next week!
