 Chicken and Rice Soup

My mother in law has a recipe for a chicken and rice soup that is delish but filled with cans upon cans of sodium filled soup. So I made this version which has less sodium and more freshness. My family devours it. Serve this yummy with warm corn tortillas for dipping. Garnish with avocado. 

 

Chicken and Rice Soup

Ingredients
  1. 1 whole rotisserie chicken
  2. 1 onion chopped
  3. 4 cloves garlic chopped
  4. 2 cups cooked wild rice
  5. 2 32 ounce boxes of chicken broth
  6. 1 can Rotel diced tomatoes and green chilies
  7. 1 teaspoon salt
  8. pepper to taste
  9. (avocado for garnish if desired)
Instructions
  1. Remove all the chicken meat from the bones and put in soup pan.
  2. Combine the rest of the ingredients with the chicken and bring to a boil.
  3. Once at a boil, lower heat and simmer for as long as possible.
Notes
  1. The longer you simmer the more flavorful the soup.
