Cheesecake Stuffed Strawberries

So rumor has is that some kids are already starting back to school!  Seriously?  UGH!  Well, summer isn’t over folks.  Photo Mama extraordinaire Bridgette stopped by to share one of her favorite quick and easy dessert recipes.

Cheesecake Stuffed Strawberries

Ingredients

Strawberries- One to two packages
Cream Cheese – One 8oz package per box strawberries
Powdered sugar
Vanilla Extract
Time: about 15-20 minutes start to finish

Directions

1. Get some yummy strawberries, for a small group of people grab two packages.

2. Slice off the top and bottom to make them level. Use your fancy strawberry huller or your skilled knife hand and carve out the center of the strawberry. Line your strawberries on a plate and if they are overly wet, pat them dry. This can make a difference when filling.

3. Grab your room temperature cream cheese, powdered sugar and vanilla.
-In a bowl add the cream cheese and (I use this measurement loosely) about 7 tablespoons of powdered sugar. I find that this is a per cream cheese box measurement.
-Add in one teaspoon of vanilla per box of cream cheese. Mix together.
Okay so now you will discover that it either needs more sugar or you are good. It should taste like cheesecake, not cream cheese. Add to your taste. I generally end up adding “some” more.
 
4. Mix well with fork or hand beater. Put your new delicious filling in a pastry bag or plastic bag with the end snipped off. Squeeze and pipe. They don’t have to be perfect because they won’t last long.

You can store them in the fridge up to a couple hours before your party but they will not keep overnight as they get watery.
